This study examined whether vitamin C levels, fruit and vegetable intake are associated with the risk of type 2 diabetes. Participants were men and women aged 40 to 75 years. Food intake was evaluated by means of a questionnaire. Vitamin C levels and the habitual intake of fruit and vegetables were then assessed. It was found that high vitamin C levels and fruit and vegetable intake were associated with a decreased risk of diabetes. Further details can be found in the study.
